Holiday Inn Disney Springs looks very nice, and has great reviews on Tripadvisor. I have not stayed there, but judging by the reviews I would be willing to try them out!
How far are you looking to walk.
Would you have issues with taking the $2 LYNX bus ($4.50 unlimited day pass/$16 unlimited week pass)?
Rosen Lake Buena Vista is about $54 a night. LYNX bus stop on the other side of the street in front of the Courtyard Marriot. The hotel also has a free shuttle bus that leaves twice in the morning and comes back twice in the evening from WDW.
Walking wise it would probably take about 30-45 minutes to Disney Springs. So doable. (but LYNX bus would be faster cause that would only take 7 minutes).
All the Disney Springs hotels have the add $20 + resort fees. Double Tree DS (the cheapest of the Disney Springs Hilton brands) to Disney Springs walking would be about 15 minutes.
The problem with the Disney Spring hotels is that when you include the resort fees, it's the same price or more expensive than the All Star Mickey resorts (if you are able to book the cheapest price in advance with the All Starts) in which case I would usually choose the All Star Mickey resorts.

Prices vary, resort fees vary. You just have to shop around and find something you are comfortable paying that is convenient enough for a vacation.

Disney Springs hotels might run close to a value depending on your travel dates and if you have a car (parking fee) plus mandatory resort fees.
Will you be depending on hotel transportation to the parks? That could be inconvenient and time costly. If you have a car and drive to parks you have to add that parking cost.
Just be sure moving offsite works when you add all costs.
If you can catch the Mousesavers deal for B resort (just ended in March but it's offered frequently), you can grab it with waived resort fees. I have 7 nights in June booked for $612, that includes taxes.
