Does he like coffee too? If so, you should try making Hermits. They are AWESOME!!! You definitely can't eat just one! My Grandma used to make the very best Hermit cookies. Mmmmmm...

This is my favorite recipe:

3 Sticks softened butter or margarine
2 large eggs
1 1/2 tsp vanilla extract
1/2 cup sugar
1 cup packed light brown sugar
2 cups all purpose flour
4 1/2 cups rolled oats
1/2 tsp salt
1 tsp baking soda

The following are optional:
I divide the dough up and stir in a few different things into each section, it gives you a few different tasting cookies all in one batch of dough.

up to 1/2 cup raisins
up to 1/2 tsp cinnamon
up to 1/3 cup finely chopped walnuts
up to 1/3 cup of dried cranberries or cherries
up to 2 cups semisweet chocolate chips
up to 1/3 cup dried apricots.

Place butter in large mixing bowl.
Preheat oven to 375
With an electric mixer beat the butter until fluffy. Add the sugars, then beat for another minute. Add the eggs and beat for 2 more minute.
Add the vanilla extract and stir with a spoon.
Mix in the flour, baking soda, and salt and mix well.
Stir in the oats until combined.
Divide the batter into separate bowls, one for each cookie flavor.
Add in the different stir-ins. Use your best judgment concerning the amounts.
Drop by rounded teaspoonfuls onto an ungreased cookie sheet.
Bake for 10 to 12 minutes or until the cookies are browned on the bottom
Cool the cookies for at least 10 minutes.
Makes about 5 dozen cookies
