Grand Gathering Suggestions

My family and my cousin's family will be travelling to WDW the week after Thanksgiving. My family has been several times but this is the first (and possibly only) trip for my cousin's family. I have no problem handling the medical issues of my family but am looking for tips for the group as a whole. Here are some of the issues:

1 adult with OCD (my dh)
1 adult with seizures
1 adult with Neurocardiogenic Sycope and Storage Platelet Disorder (my dd25)
1 adult with Migraines and allergy to latex
9 y/o with ADHD
8 y/o with allergies to latex, milk, egg, asthma, reflux, migraines (my ds)
5 y/o with Storage Pool Platelet Disorder, she's also allergic to dust mites but not sure I can do anything about this (my dd)
5 y/o with anxiety issues and possibly bi-polar
4 y/o with ADHD, asthma, and a heart condition (i don't know the name but it's the one that you hear of athlete's just suddenly passing)
2 y/o with asthma and full leg braces (trying to correct bowed legs)

Any suggestion or tips that might make this trip easier, non-dangerous for any of the members. I really want my cousin's family to have a good time since this is the first trip for their kids. We will be staying at POR.
 
Wow! You have a lot of different needs to address! Have you thought about what type of gathering you would like to do specifically?

Maybe something as simple as a character meal would be "grand" enough for your group, maybe not.

Since you had some food allergies plan all your dining ahead of time. When you make your PS/ADR's make sure to mention all special dietary needs and make sure the CM reads it back to you accurately.

We absolutely LOVE Chef Mickey's and wouldn't feel like our trip was complete without a breakfast there! The dinner is not quite as good. If concerned about the children's special needs try to make your ADR for one of the first times available when the restaurant opens; it will probably be less hectic/noisy/crowded. And they probably won't have to wait as long for the characters. We did a late seating once and it was awful, the characters completely forgot to come around to our table. We had to ask a CM to send them back out. Although on the plus side, it was definitely one-on-one interaction.
