I am taking a day to visit resorts so very flexible about where I can go that day. Wanting to try some new dining this trip. I am looking at either mainly for the food, Lobster Benedict at Grand Floridian or Cayo Hueso Shrimp Pasta at Olivia’s. Any personal experience and thoughts on these?

While I can’t comment on those specific entrees, I have eaten at Olivia’s many times. Breakfast is always awesome but dinner was a let down.
I have only been to Grand Floridian once for dinner and it was good.
Sorry I can’t be more helpful :confused3

Olivia's has a more relaxed vibe. I found Grand Floridian Cafe to be a bit more formal. I also have not had either entree mentioned. I usually get the steak at GFC and the buttermilk chicken at Olivia's.

Haven't tried the dishes you mentioned but we've dined at both restaurants many times. Food is good at both, I think we like the menu choices more at Olivia's.
