Grand Cayman time change question

We will be on the Magic in January with a stop at Grand Cayman and we are looking to book a dolphin swim at Dolphin Discovery, but I am concerned about the time change. Disney lists our time at Grand Cayman as 7:30am - 3:30pm, can anyone tell me if this is eastern time or central time?

I was looking to book the excursion at 11:00am (assuming that is central time, since it is on their website), would that give us time to get to the excursion and back?

Local time.

They quote local island time, thus is a tender port, so I would say book a bit earlier you should get off by 8.30 you want a buffer if everything us running late and you do not want to miss the ship.
 
They will put a card in your stateroom the night before the time change and it'll be listed on your Navigator as well.
 
Technically the Caymans are Eastern Time, however, they do not observe Daylight Saving Time. So... if the ship is traveling during a time of Daylight Saving Time (March-November) you will have to change times. However, in January, Grand Cayman shouldn't switch during that time period.
