This really gives you something to think about. I am also the type of person that doesn't like to get up early on vacation, but sometimes I find the excitement of being in WDW getting me up early!
You could do a little of both. Get up early-ish, have breakfast, visit a park, come back to the hotel and relax (take a nap or go swimming), go out for lunch, then go back to the park (or a different park) and stay until closing. You might want to pick just a few days that you will get up early and then let a few days be free to do whatever. I let it come to me naturally. If the alarm goes off at 7 am and I don't feel ready yet, I go back to sleep for an hour or so. The parks will be there all day - whenever I get up!
