Good Night for Palo

We are going on the 7 night eastern Caribbean cruise on the Magic.
I was wondering what is a good night to make a reservation for Palo??

Also, what is a good morning to do the brunch?

my DH and I like to go to Palo on formal night, the kids don't love getting dressed up- so we only make them do it once, for semi-formal.
