Good & easy meal to prepare?

My parents and my sister & brother-in-law are heading down to Florida the same week we are, although we are all staying at different properties. My mom came up with the idea that we each take one night to cook dinner for everyone; thus we each get 3 "free dinners" :) which I like, but I hate to cook (ESPECIALLY on vacation. But it's for only 1 night, so I'll survive. My question is......what I should make for a party of 9? We are driving down so I'm hoping for something I can prepare & freeze in a 9x13 before I leave home. That way all I have to do is pop it in the oven & make a salad.

Any really delicious recipes that you can recommend??

Wow! You can feed 9 people from a 9 x 13 pan of food? Please understand I have 2 teenagers in my house so that is a totally foreign concept to me! :p

But assuming that to be the case why not make it super easy and pick up a Stouffers Lasagna at the store? Or something similar.

You could use a throw away pan and make a lasagna and freeze it then just reheat it. Another option would be to make chicken pot pie and freeze it.
 

My mind went straight to the lasagna.

Since you will have a car, you can stop at the food store and pick up the whole meal. Some food stores have those broiled chickens at a reasonable price. You could pick up 2 of them, and a quart of potato salad. Add any other side dish you like. You can't go wrong with one of those chocolate chip cakes from the bakery department for desert.

The hardest part will be coordinating your times to meet for dinner.
 
Sausage & Rice Casserole

Ingredients

1 lb. hot pork sausage
1/2 cup chopped bell pepper
1 cup chopped celery
1 large onion (chopped)
2 cans cream of chicken soup
2 can cream of mushroom soup
1 cup uncooked rice
1 pkg. onion soup mix

Preparation

Sauté sausage, bell pepper, onion, & celery until sausage is almost done. Add soups & rice to sausage mixture. Place in a casserole dish. Bake at 400° F for approximately 1 hour. Water may be added if needed.

Adjust recipe to fill a large enough pan.

Chicken/Rice Casserole

2 (10.75 ounce) cans condensed cream of chicken soup
1 (3 pound) whole chicken
1 (16 ounce) package frozen mixed vegetables, thawed
2 cups cooked rice
2/3 cup water
1/2 cup crushed buttery round crackers


Directions

1 Preheat oven to 350 degrees F (175 degrees C).
2 In a large bowl combine the soup, chicken, cooked vegetables, cooked rice and water. Mix well and spread mixture in a 9x13 inch baking dish. Sprinkle crushed cracker crumbs on top and bake in the preheated oven for about 15 to 20 minutes. Let cool 10 minutes and serve.

I agree, I don't see how you can feed nine people with a 9 X 13 and a salad LOL but my family likes to eat.
 
I like the sound of the Lasagne as well but if you want something different to take what about a sausage and red wine casserole - I think you would call the sausages links.

You will need enough thick links for 2-3 per person, 2 bottlles of red wine, 500g of onions, quatered, 500g of mushrooms , a little flour (to thicken sauce) and some oil.

Brown the sausages under the grill, whilst doing this heat the oil in a large saucepan and cook the onions when they are softened add the sausages, and now blend some of the wine with 2 tablespoons of flour and add this and the rest of the wine to the saucepan bring this to the boil and simmer for 40 mins now add the mushrooms and cook for a further 10 minutes. All done its great served with mashed potatoes and crusty bread and freezes really well. If you try this I hope that you enjoy it as much as my family do and it makes sausages (links) taste really great....

I'd go for the lasagne and salad, but here are a couple of other ideas. You could do spaghetti. You could also do cans of ravioli topped with cooked ground beef, a little extra sauce and cheese.

Here is a family favorite that might work.
6 Can Casserole
1 can cream of mushroom soup
1 can cream of chicken (or celery) soup
1 can Chinese noodles
1 can evaportated milk
2 small cans chicken (or substitute 1 lg. can)

Flake the chicken and combine with the soups. Add milk and mix. Add noodles and pour into baking dish. Cook 30 minutes at 350 until bubbly. This can be easily doubled. I've even experimented with the large soup cans and the bags of Chinese noodles. I think it is a no-fail recipe. It's easy to fix and the preparation takes 5 minutes tops. Serve with green beans or a salad and rolls. It's really good. I've made it lots of times when I needed to pull off a meal fast.
 
one word.. CROCKPOT, if you have one, bring it, check out other threads on this board for recipes and easy clean up, and use it. You don't even have to worry aout getting back in time to cook and if people arrive late it's ok!
 
My favorite crockpot meal Peel potatoes and place in pot around and under rumproast. Also onions and baby carrots. Then mix a can of Progresso hearty tomato soup a little water and a pack of lipton recipes onion soup. Slap the lid on. 5 hours on high or 10 hours on low. The house will smell great when you return. Add small salad and bread and you have a meal. Can you tell I am not a recipe person? I just eyeball things mostly. Sorry it is not not more precise!
