I will say Coronado Springs has lots of dining options, more than most the other hotels.

You will probably get more answers either in Disney Resorts or Disney Restaurants, but there are lots of places (though some are still closed due to covid/staffing/etc.)

Staying here right now for our company Christmas Party. Cafe Rix is the go to for walk through service. Donuts and other pastries with plenty of coffee. El Mercado de Coronado is the counter service breakfast option and will have the hot breakfast sandwiches and coffees.
