Going solo. No reservations

This will be my first solo trip and I though I would just wing it. In many past years we have eaten at lots of the top table-service places but on this trip I have decided to be spontaneous and let the universe pick. My priorities are Jiko and Narcoosee's and I don't see any problem getting last minute rezs as those places are so high-end. It also helps a lot to have the Disney Destinations app, which is great for last minute openings and closures... and I am not adverse to eating at the bar so that helps too. If you were going solo where would you eat 'last minute'?
