Going in May for the 1st Time... What to do, how to plan, and expect?

Hi, I will be going to Disney in May (22-26) for the first time and as of Sept 17, 2016 we are AP's. I have been to Disney in Sept-Dec plenty of times. Very curious of how to plan, what to do, and what to expect in May? We will be staying at Pop Century. Celebrating my Dad's birthday on the 24th at 0hana's.
 

Would you recommend Rope Drop-Lunch, go back to resort, then evening back at parks? And thanks for heads up.

Personally, yes. That's what we do in general, but we learned to do that on a Memorial Day 2013 trip that was alarmingly hot already.
 
We love that week. You'll see it get more crowded on Friday but overall we found crowds very manageable.
