You'll probably get better advice over on the DISabilities forum.

I would suggest browsing through the top listings at https://www.findmeglutenfree.com/us/fl/orlando for ones that are nearby. Just about anything at Disney Springs is pretty good at doing food allergens and sensitivities.

Two of my favorites are gone. There used to be a blogger named Jennifer who posted at celiacinorlando.com but alas she has gone dormant and the site domain is up for sale. Our go to GF burger chain Burger 21 seems to have pulled out of Orlando as well. Lots of locations in the Tampa area still if you are heading over to the left coast.

Wolfgang Puck Express has a lot to offer, as I recall, and Trattoria al Forno, on the Boardwalk is surprisingly a great choice (at least was in the past.) Also, many Japanese, Spanish and Mexican places offer great things because they are more rice and corn based, so maybe you can maybe look at menus that offer those cuisines.
