I just got an email from Disney Destinations about Disneyland, and there's a link to a Gingerbread Pancake recipe by Chef Nick at PPH. Since the Pumpkin Muffin recipe was fun to find out about, I'll post this too!
Ingredients:
* 3 ½ ounces of milk
* 3 ½ ounces of water
* 2 eggs, large, whole
* 1 ounce of butter
* 6 ounces of package mix
(Use a malted pancake mix which is available in most supermarkets. Carbon's Golden Malted Pancake and Waffle Flour is recommended.)
* ¼ ounce of dry ginger powder
* ⅛ ounce of nutmeg
* ⅛ ounce of allspice
* ⅛ ounce cinnamon powder
* ⅛ teaspoon of vanilla extract
* 4 ounces of pancake syrup
Instructions:
* Preheat griddle to desired temperature.
* In a large mixing bowl, whisk together milk, water, eggs, butter and package mix until pancake batter is smooth.
* Blend together dry ginger powder, nutmeg, allspice and cinnamon powder, then fold into pancake batter.
* For added fun, remove pancakes from griddle and place onto a cookie sheet. Use a cookie cutter to shape pancakes into festive gingerbread men!
Gracious goodness me that sounds good! Gotta get some gingerbread man cutters, and maybe I can make these.
