We (DH and I) did not love the Poly, so we are trying the GF this time.  We like the feel of the GF much more than the Poly, and our kiddos, well, lucky for them that it has a pool and a beach (oh yeah, and a dinner with Cinderella!!!).  They'll love it!!!

I think that the GF is a fabulous resort, and the monorail can't be beat. That said, I think the Poly theming is more suited for kids with the pool and what-not, the TTC is within walking distance for direct service to Epcot, and you still have all the other transportation options available that the GF has as well. Either resort, you can't go wrong. My personal preference is the Poly.
Pick the GF - here is why.....
1) with a 1 and 5 year old - you are not walking to the TTC - unless you are carrying them - even with strollers it is a hike.

I have to disagree with this. If you have a stroller(s), it's perfectly doable. We stayed at the Poly and walked to the TTC every time we went to Epcot, no problem at all, probably only about 7-8 minutes tops I'd say. I would think the 5 y.o. could walk that if need be, if you don't have a stroller, I'm not sure how you'd feel about carrying the 1 y.o.
I've never stayed at the GF, but I can tell you our kids (almost 3 and almost 5 at our trip time) LOVED the Poly. Great pool, if it's warm enough, your 5 year old would likely love the slide. Great CS at Captain Cook's, too.
Haven't been at Xmas time either, so I can't comment on that.
