GC or Charging Privileges?

I'm thinking about whether or not to give my kids (DD14 & DS12) charging privileges, primarily for World Showcase at Epcot and Eating Around the World during Food & Wine. I'll say off the bat that I trust my kids to not charge up a bunch of stuff that I would not approve - they have never been sneaky about money. If I tell them it is for food and they need permission for toys or sweet beverages, that's what they'll do. And we'll mostly be all together for the bulk of our time in general at WDW so even if they were so inclined, they won't have much opportunity.

My question here is more about convenience. I'd love for the kids to be able to go up to their own booth or one of the QS restaurants, place their own order, and get their own item(s) while I'm at a booth next door, or sitting down for a quick rest. They will have Magic Bands and it seems pretty convenient, but I'm wondering if there is a downside that I'm not seeing? Like maybe do the booths also require Mobile Order? Or are charging privileges for kids limited or restricted in some way that I'm not aware of? And if you would advocate for them to have a gift card instead, how do you manage that? How much would you start with (for food/snacks) and is it easy to reload on the app?
 
If you trust them, I’d say go for it. They’re old enough. Personally my kids each have their own GC that they use for their souvenirs(so when the moneys gone they know they can’t get anything else) and the older ones have charging privileges for any food they may need when I’m not right there. I’ve never had any problems with it.
