Hopefully I am posting this in the right place, if not, Mods please transfer to the proper forum.

If we are not in our room (VWL) when GradenGrocer arrives (i.e., the plane is delayed), how do we arrange the tip? What is the proper amount to tip for this type of service, 10%, 15%, 20% of the bill or a set amount? Also, what if between now and our arrival we decide we want to add/remove items from our cart? Can that be done once you have “checked out”?

You can pre-pay it. For smaller orders I tip a little more than 15%. For larger orders, a little less. I think you can adjust your order after you "check out", but I don't know that I ever have.
 
You can pay the tip at check-out on their site. This way it's already done and they can leave your groceries with bell services until you arrive or your room is ready. If there's a problem with your order they will fix it no problem. I think you can adjust your order pretty close to your arrival date. Just ask. They are pretty good!
