Free or cheap local non-touristy things to do (W. Caribbean)

We are sailing the 7-night western Caribbean route out of Galveston very soon and we just aren't really into the super expensive super touristy stuff and would rather get off the. Eaten path or experience something relatively unique (realizing we can't stray too far and likely can't escape the port area...)
Anyone have any recommendations for Jamaica (Falmouth) Grand Cayman or Cozumel?
Greatly appreciated!
 
During our last trip to Cozumel, we hired a driver for the day and explored the south side of the island. I was an awesome experience. Out of all of the things we've done in Cozumel over the years, it was the most enjoyable.
 
Ride the public bus (think van) in Grand Cayman to the Public Beach on 7 Mile Beach. The ride is cheap, easy and often quicker than a cab. The Public Beach has some beach bars/cafes that will rent you chairs and umbrellas. You will be able to see the ship from the beach.

we did a tour in Jamaica to the Blue Hole. We booked thru Chris Jamaica Tours. It was awesome. Blue Hole is a series of waterfalls & pools in the jungle and you jump off the falls. The last 15 minutes of the ride to get there is on unpaved road so this is something to do if you literally want to try something off the beaten path. Chris was waiting for us at the agreed upon time at the port. The van is is clean. He was very accommodating. When we got to the falls, he chose a guide for us that was great. Even my 6 year old jumped off the cliffs. It was a great experience. Yes, there are other tourists there but it was not crowded. We were back in Falmouth in plenty of time.
