Isn't it so tempting though to get 10 days because there is not much price difference in the days between 7 and 10.

If you're already planning to get 7 day non-expiring passes, these extra 3 days for a 3rd future trip are a good deal! And if you're already planning on adding the water parks and/or park-hopping, then there's no further cost to do so with the longer passes, a bonus really.
However,
if you only want to visit the theme parks (not the water parks), especially if you want to spend just a few hours a day at a park,
not hopping or going commando style, then it may be better to just get a 5-day regular MYW pass for each of two trips. 5-day ($236.43) x 2 = $472.86. 10 day non-expiring = $479.20. The difference is negligible ($6.34 saved) but you
don't have the high upfront costs now and you
don't have to keep track of any leftover, partly-used passes when getting the
separate, 5-day base MYW passes.
If you plan to spread the usage over
3 or more trips, the
10-day non-expiring is better.
If you plan to get the
water park add-on, the
10-day non-expiring is better.
If you plan to get the
park-hopping add-on, the
10-day non-expiring is better.
It's better to pay the $50+tax flat rate for an add-on, just once with the 10-day, rather than paying it twice with separate 5-days.
AP's at the
DVC or FL Resident discount rates are good for 2 trips within 365 days, especially if you want the other AP discounts and/or dining card. It all depends on how many days in a year you'd like to step foot inside the parks, even if just to visit a restaurant or watch a show or fireworks.
