Food issues/intolerances/allergies (and choices) at Disneyland!

I just realized I have some info pertinent to Disneyland, that goes along with the contact person info the forum already has for WDW.

There is a chef at Disneyland Resort that is in charge of helping people who have food issues there. His strong focus is for those who are gluten free, but he would also help with allergies and even choices for my family's vegetarianism.

I found his name and number with the help of a Dis'er, and that info is from this site. That site itself is outdated, but the info on that page for Chef Chris is absolute.

You can also call Disney Dining (at Disneyland) and ask to be put through to the chef, they are MORE than happy to do this for you!!!

I left him a message as specific as I could, and he called back the next day. He was lovely, and knew all about ingredients and the philosophy of ingredients they use (they are trying to keep as many people happy at once as they can...so refried beans are vegetarian to help veggies, dieters, and MANY religions...things are fried separately to mainly help out the gluten-free, to keep breading off of things without breading, but of course that helps vegetarians and various religious people at the same time).

I'm getting too wordy here, but I wanted to get that word out. Chef Chris at Disneyland Resort.

While on the phone he mentioned that they recently made a lasagna for a vegan who is into raw food (nothing heated over 120 degrees). If they can help that fellow, they can help you, too.

Hmm. I thought this would be helpful! There's info here on who to contact at WDW about food needs, but no one had talked about DLR.
