Hello Everyone! This will be our first "solo" camping trip and was wondering if anyone had any good ideas for meals.. I am looking for anything easy and quick, other than the usual hot dogs! We will have a 38 foot R.V., so storage will not be a problem. I thought I would put my crock pot to good use while we spend the days at the parks! Any ideas would be greatly appreciated!
 
Here's what we do.
We bought one of those foodsaver vacuum pack machines and as we plan for the trip we cook all of our favorites... Shrimp ettoufee', turkey and andoullie gumbo, alligator sauce piquant, meatballs and spaghetti, Red Beans and Rice (it's good to be a Cajun from Louisiana!) and vacuum pack all of it. It all fits in a small ice chest because of the compact nature of vacuum packed food, and we buy dry ice and stow the chest.
Now, when we get to FW, we have all this great food (we, and tend to cook better than most of the restaurants at WDW), we cook the rice and spaghetti when we get to FW, and we save loads... We have 6-10 meals with us and we tend to head back to the RV for our big meal around 3-5pm... and it's awesome to have home cooked "comfort food."
The FoodSaver was the best $100 we ever spent and you can get them at any WalMart.

I know there are some great cooks out there with some great recipes and/or ideas! Help out a girl who wants to spend more time playing then cooking.. Ha Ha

I love my Coleman Road Trip Grill....hamburgers, sausage, chicken, pork chops, steak, pancakes, eggs, grilled cheese (It has a griddle, grates and pot grate.). Anything quick and simple that goes on the grill.

I also like my toaster oven for Chicken Kiev, Cordon Bleu or Brocolli Cheese (purchased at Sam's), baked potatoes, bagels, frozen waffles (for the kiddo's), etc.

My crock pot sees pot roast, pre-cut carrots and potatoes covered in Spicy V8. Boneless pork roast with cranberry sauce and sugar. Boneless chicken pieces w/ barbie sauce (as my 2 yo dd says). Country ribs (boneless pork ribs) with sauer kraut.

I can, so I often have a jar of homemade spaghetti sauce, salsa, fruit.

The vacuum pack idea is a good one, although I would do it only if I made twice the recipe to save the 'leftovers'. I wouldn't have time to pre-make those dinners for the sole purpose of bringing them camping!

Another thought...try and remember back to previous trips. After a long day seeing the sights what kind of food did you want to come back to? Bring your personal comfort foods...nothing that will hold you back the next day due to upset stomach or that too full feeling.

That's what we do... the weeks leading up to the trip, all those dishes I mentioned are meals that we'll eat "that night"... we just make extra and vac-pack the rest for our trip... it keeps just like fresh... It's awesome because prep time on our vacation is often just 5 minues for a meal that would ordinarily take hours to cook.
 
MarkB, I bet if you figured a way to ship those meals to campers, you'd have yourself a tidy little business going!! ;)

May just have to break my personal rule and go to Wal Mart for one of those vacuu babies!
 
one of the other categories on the Dis board has crock pot cooking I have tried some of the receipes here at the house and my family has really enjoyed them especially the one with the chicken and cream cheese in the crock pot, I will have to look at the recepie again and let you know the ingred....also sams has a cook book for crock pots...fix it and forget it, great receipes

One of our favorite go alongs for a meal are the frozen or-ida potatoes with onions and peppers, save your bacon grease, and just warm up the potatoes in the skillet takes just a few minutes and they are WONDERFUL. they go with hamburgers, steak, whatever...

pot roast in the crock pot with the wylers, beef stew starter mix over rice... add a few fresh veggies with the pack and yum yum...
