I am going to be at Disney during F&W should I expect large crowds during this time? I only plan to spend one day at Epcot how does this affect the rest of the parks?
It depends on when during the Food and Wine Festival you're going. Weekends are traditionally crowded (locals make their way over to Epcot), as well as the holidays that fall during F&WF (Colubmus Day, Veteran's Day, Halloween). If you can avoid these times, it's a great time to go!

its pretty cool to go from country to country and try all the food & wines & goodies
We went the first week of November last year not realizing it was F&W when I booked. But we were very happy to hear that it was. We stayed away from Epcot on the weekend since I learned here that it got very busy then and that strategy worked well. We too enjoyed sampling the food and wine from many countries and if we ever get to go to WDW again, I wouldn't hesitate to go at that time if the timing of our vacation worked out that way.
The last two years we have gone during Food & Wine; it is one of my very favorite events (the cheddar soup and ice reserve wine in Canada is not to be missed). The crowds are big, especially on the weekends which is when lots of the locals attend, but its well worth it! I didn't notice a big differance in crowds at the other parks.
Most people go to the F&W at night but Saturday nights are always packed.(alot of locals). Week day nights are not terrible though. The food is delicious and so is trying all the beers and wines. You also have Eat to the Beat concerts. Doesn't really effect the other attendance in the other parks. We have gone Halloween week for the past 11 years and it is our favorite time of year to go.
EPCOT is great during F&W, but be sure to go while it's still light outside (the days get shorter into October-November). The World Showcase isn't particularly well lit at night, and walking can be a little difficult; it's especially difficult avoiding ECVs. Some people drive them like they're at the Indy 500!
We'll be going the first day too. It's our last full day at Disney and I'm excited that we'll get to experience this. I know there will be a lot of people, but I don't want to miss getting to try the foods and wines.
I can't remember what day of the week it was we were there, but the crowds got noticeably larger at dusk. Luckily we were leaving w/our two little kiddos about the time it was getting crowded. The day time was fine!
