Five hours for US in early December

We will have at least five spare hours in Orlando on a Thursday afternoon, probably in early December, after our cruise. We will have a late flight home, about eleven hours after we disembark in Port Canaveral. We will have a rental car for the day and are weighing our options for a kid-free afternoon in Orlando. We haven't been to US since our teens. When we return to Florida in a couple years with the kids, we'll do Disney and IOA.
Would we have time to hit the grown-up highlights of US (not IOA) in five or six hours in the afternoon, without an express pass in a low season, probably the first Thursday in December (also considering mid-Nov and after holidays January)??? I'm not sure I can tackle a theme park without hitting rope drop and using fastpasses all day. Any guesses how bad the lines will be? We want to do the rock rollercoaster, Mummy, MiB, Shrek or Terminator, Simpsons, and ET or Jaws.

It depends on when you arrive at the parks. Since the parks close at 6pm in December, you won't get a lot done unless you're arriving around noon or so. The lines shouldn't be a problem but you will definitely be pressed for time.
 
To clarify --we can be off the boat around nine a.m. without rushing, from my understanding. I don't know how long it will take to pick up the rental car, then we have an hour drive. We should be there by noon, easily, I think? Maybe 11 am? How long does it take from arrival at the lot to entering the park?
We would leave a little before the park closes to return the car and check in at the airport.
