First Visit to Vero Beach! Advice please?

I am taking my husband to Vero Beach from December 14-19 to celebrate his 70th birthday. The trip is a total surprise! I am looking for restaurants in the area with good food, things to do in the area for fun, and weather information from anyone who has been there in December. He loves to lay by the pool so I'm hoping it will be warm enough for that. Any other recommendations/tips about Vero Beach would be greatly appreciated! TIA
 
We were there in September, the meal we had in the revamped restaurants was OK but we had a great night in the lounge with a flatbread and charcuterie (sp?) plate. It was a just about a perfect night!

We didn't leave the resort so I can't comment other than there is a restaurant nearby, Squidlips that was open when we went to Vero in 2004 and is still open.
 
We loved drinks/appetizers at green cabin. Had a great dinner at riverside cafe which is nothing fancy but good food and right on water. Was only there in summer so can’t help with weather etc but pool area is very nice, spent a lot of time there.

I highly recommend Mo-Bay Grill in Sebastian. It was excellent.
 
We have been going to Vero once to twice a year for the past eleven years. We also love Mo Bay Grill inSebastian and Riverside Grill in Vero. Waldo's in Vero is a nice place to get a drink if you sit outside you are right on the ocean. Some of the food is good some things not so. But a great view. The Red Onion is a great place in Vero for a wonderful salad and fantastic sandwich, both grouper Reuben and meatloaf. We did not like Squid Lips. Tiki Bar in Sebastian is a fun place to go for a drink, think sand, bar and music. We also love the Green Cabin and we used to love the restaurant at the resort, but have not been there since they changed the restaurant. December weather can be iffy, one time we had nice warm pool weather and one time we had stormy weather. We have not been there in awhile, since I have been having some medical problems, I do miss it. Hope you have a great time.

We really enjoyed The Italian Cousin in Sebastian this past August. For a really casual place we went to Mulligan's in Vero Beach.

We were just there last week.

Things we did:
McCarty's Treasure Museum - $2 entrance fee - quite interesting
National Navy Seal Museum - $10 entrance fee - well worth the time and money
Citrus Museum/visit Citrus Store - Free - Museum is a quick 15 minute visit

Places we ate:
Mulligan's - OK - not great, not bad - good margaritas
Pizzoodles - Great pizza - the garlic knots were also good. This is a very small place but came highly recommended by the recreation staff and they were right!
Taco Dive (Ft. Pierce, but there is also one in VB) - Wonderful start with the chips and dips and then move on to a taco bowl or their wet burrito.
Taste of Asia - OK
Green Marlin Restaurant and Raw Bar - OK (very little actually available raw)
