First time at Tusker House! Lunch transition time?

I have reservations at 10:40am for Tusker House. I have been to plenty of buffets but never a Disney one, but I would assume the process is the same?

Few questions:
  • Like other TS restaurants, will we probably have to wait a lil for a table, even with the reservation?
  • Do we pay on arrival? I wanted breakfast but know it's getting super close to lunch time. We have a larger party so 1040 is all I could get.
  • What if the wait is over 15 minutes and it starts getting into lunch time? Will I have to pay lunch prices?
  • Do they take away the bfast food immediately at 11?

You have a breakfast reservation, so you will pay breakfast prices, regardless of when they seat you and regardless of when you pay (which will be at the end of your meal). Breakfast food will be available when you're seated (no matter how late), and lunch food will be available, too. You'll get the best of both worlds.

1. You may or may not have to wait. For example the GF and I ate there on our last trip and we checked in before our reservation time and were seated within 2 minutes.
2. You pay at the end of the meal.

I do not have answers to your final two questions but I'm sure others will.
 
I normally try for a 10:40-10:45 reservation for this reason.
Start with breakfast and then move on to their amazing lunch.

When you get there, if there are any bfast items you want get them! They will transition station or zone to lunch. We had the same time and I wish I had grabbed more pastry. Was gone when I went back up
 
We also do this timing, to tour early and take advantage of shorter lines, then have late brft and sample some lunch items. Lunch begins at 11, so they will start to change over, but still have brft food out. You can also check in a little early, around 10:30, and they may be able to seat you. As PP mentioned, grab any items you really want that might start to be transitioned. Enjoy the breakfast, and coconut curry shrimp for lunch was yummy as well.
 
We went the day before Thanksgiving. Our reservation was also at 10:40. We didn't get there early; I generally do not show up 15 minutes early to any reservation at Disney because even when showing up early, we waited well past our reservation time too many times. At 10:39, we got to Tusker House after wandering around Africa. We waited in line for more than 10 minutes to check in. So we had already missed our reservation time by then. In hindsight, I wish we had gotten there around 10:30, because we were just killing time wandering around. At 10:15, there had been no line at all.

After checking in, we waited more than 10 minutes to get to our table. So we were seated around 11:05 for a 10:40 reservation. My son only wanted breakfast items and found them on a few trips up to the buffet. I think the central breakfast station did switch to dessert items at some point, but my sweet-tooth son didn't mind that switch. I agree with Cassie, if you want breakfast, fill your plate on your first and second trips to the buffet to make sure you get all that you want.

My daughter found a rice dish that she loved, so she ate several helpings of that. I think I ate mostly lunch items - they are much more interesting and delicious. We finished up shortly after noon, so it didn't take too long.
 
I know you're trying to get breakfast and I hope it works out for you (keep trying for an earlier time, things pop up all the time.) That said, the lunch at TH is fantastic. It is the best character buffet on property, the food is outstanding.
