I have a bunch so its hard to pick. I can narrow it down to these:

Adventureland Loop (the music by Balafon Marimba Ensemble)
Illuminations Pre-Show Loop (both the old AND current version)

I love any, and all music from Epcot. I still miss the music from the original and 2nd verison of the Spaceship Earth ride ending. From the original attraction, the song was called "Tomorrow's Child". Absolutely beautiful. And the way the instrumentals of that song played when you felt like you were in outer space looking back at Earth. Another favorite is the theme from The American Adventure show at World Showcase. I love how the song is played in instrumentals at the park entrance.
