Favorite thing to do on a "skip the parks" day?

Shop. We hit all the outlet malls. We then drive over to Citywalk at Universal for dinner. Thankfully, we've trained our 3dds to love shopping at an early age!
 
My DW & I usually take one day to lounge by the pool, sip drinks, & do laundry. Work on the tan a little, too!!!
 
Go to downtown Kissimmee and see the marina. There is a great kids playground and just about every food option you can think of is on 192.
 
I've been to Gatorland and it is a hoot. Kids will love the gator shows and it is a nice change of pace from all the Disney stuff. It is a relaxing way to spend a few hours.

We would like to take our kids to a Florida beach on our day off. Any recommendations for a beach not too far away that has nice sand and maybe shells. A good family beach to spend a few hours. We won't want to drive far though.

Go to the petting zoo at FW. My kids had a great time there, and best of all it was free! They also offered pony rides for a couple dollars a piece.

Also, in the evening FW has a campfire and sing-along with Chip and Dale. After the sing-along they show a Disney movie. Again, a fun time and it's free (except if you choose to buy stuff to make smores, they sell it at the campfire)
 
being an anal planner....i tried to maximize our time in the parks and non park time.....so our first day there, we arrived mid morning and spent about 4 hours at disneyquest.....it was a blast (we were ages 24-54 and one 8 year old). Had lunch in cheesecake factory there. Then onto some shopping at Downtown disney, then character dinner at Contemporary and planned it just right to see the fireworks from the roof after dinner. it was a great way to start our vacation and we didn't even had to go into the parks yet!

We had a break day midweek that we slept in (since i made them get up at 6am the rest of the time to maximize time! lol).....we spent time by the pool (PO, riverside), did laundry and then toured the resorts. We had lunch at Beaches and Cream. We checked out the boardwalk too.

Someone mentioned doing a monorail resort happy hour....that's a good idea too! Watching the electrical water pagenant from the beach of the poly or GF was always fun too
