Its very hot but I'd still like a little dessert ~ cookies aren't just for the holidays ;) so lets share our favs. Heres one that I think is fabulous and tropical.

Pina Colada Cookies

4 C flour 1-1/2 teaspn rum extract
1 -1/2 tsp baking soda 1-1/2 C toasted shredded coconut
1/2 teaspn salt 4 C white chocolate chips
1 C unsalt butter 2 C toasted chopped macademia nuts
2 C brown sugar 2 eggs
1 (20 oz) can crushed 3 drops pina colada candy oil
pineapple ,drained

1. Sift together flour,salt, and baking soda. In a large bowl, cream together the butter and brown sugar. Stir in eggs, pina colada oil and rum extract, mix well. Stir in the dried ingredients until combined. Stir in drained pineapple, coconut, nuts, and white chocolate. Cover and refrig till firm (@ 2 hrs)

2. Preheat oven 350.
roll dough into golf balls. Place 2- 1/2 in apart on parchment line cookie sheets. Bake 15-20 minutes till golden. cool on wire racks.

* Note~ I buy pina colada candy oil in candy making supply store or Michaels.
 
I love snickerdoodle cookies. My grandpa and I used to bake a batch together at least once a month when I was growing up. Now that he has been gone for almost 12 years, it is the one thing I do to help keep his memory alive.

Snickerdoodle Cookie Recipe Ingredients
• 1/2 cup butter, softened
• 1 cup sugar
• 1/4 teaspoon baking soda
• 1/4 teaspoon cream of tartar
• 1 large egg
• 1/2 teaspoon vanilla
• 1 1/2 cups all purpose flour
• 4 Tablespoons granulated sugar
• 1 1/2 teaspoons cinnamon

Snickerdoodle Cookie Directions

Preheat oven to 375 degrees. In a mixing bowl, beat the butter on medium speed for 30 seconds. Add the 1 cup sugar, baking soda, and cream of tartar. Beat until combined, scraping sides of bowl occasionally. Beat in the egg and vanilla until well blended. Beat in as much flour as you can with the mixer, and stir in remaining flour.

Cover with plastic wrap and chill for 1 hour.

Combine the 4 tablespoons sugar and 1 1/2 teaspoons cinnamon. Shape the dough into 1 inch balls and roll in cinnamon sugar mixture to coat.

Place balls of dough 2 inches apart on an ungreased cookie sheet.

Bake for 10 to 11 minutes or until edges are beautifully golden.

Transfer cookies to a wire rack to cool.
 
These cookies are SO good and really easy!

Lemon Burst Cookies

1 (18.25-ounce) package lemon cake mix
2 eggs
1/3 cup vegetable oil
Zest of 2 lemons
2 Tablespoons lemon juice
½ teaspoon lemon extract
1/3 cup confectioner’s sugar

1. Preheat oven to 375 degrees F. Line baking sheet with parchment paper or silicone baking mat.

2. Pour cake mix into a large bowl. Stir in eggs, oil, lemon zest, lemon juice and lemon extract until well blended.

3. Place confectioner’s sugar in a bowl.

4. Drop heaping tablespoonfuls of dough into balls and roll in confectioner’s sugar until lightly coated and place on baking sheet.

5. Bake for about 10 minutes or until the edges are lightly browned. Cool for 2-3 minutes on the cookie sheet and then transfer to a wire rack to cool completely.
 
Lemonade Cookies

1 c. softened butter (real butter, not margarine)
1 c. sugar
2 eggs
3 c. flour
1 tsp. baking soda
6oz can frozen lemonade concentrate (do not make into lemonade, leave concentrated), thawed
Additional sugar

Cream butter and sugar. Add eggs. Mix flour and soda, add to creamed mixture alternately with 1/3 c. of the lemonade concentrate. Drop by rounded teaspoonfuls onto ungreased baking sheets. (I like to use parchment paper). Bake 400 8 minutes. Edges should be lightly browned. Cool a minute, put onto cooling racks. Brush with remaining lemonade concentrate, sprinkle on sugar.

Very light in texture, and just enough sweet/sour combo to make me go nomnomnom. I've made them with lemonade, pink lemonade, and limeade.

Brownie Cookies;

One family-sized brownie mix
1 egg
1/3 cup oil
2 TBSP water

375*, 8-9 minutes. Cool for a minute or two before removing from cookie sheets.

These things are DEADLY. :cool1: I like to add crushed nuts and/or coconut.
 
I love oatmeal cookies. Easy to make and keep stocked up on.
1 cup of sugar, 1 cup of brown sugar, 1 cup of shortening, 2 eggs, 2 tbsps milk, 1 tsp vanilla, 1 tsp salt, 1 tsp baking soda, 1 1/2 cup of flour. As much oatmeal as you like, recipe calls for 4 cups but that is way to much.. I use about 2 to 2 1/2 and they are much better that way. Of course, chocolate chips, raisins, nuts, fruit bits can be added too.
 
OMG people only ONE chocolate recipe? Seriously any other flavor in my opinion is just what is left on the plate when you are desperate.:scared1::lmao:
 
These are my absolute favorite chocolate cookies:

Recipe: Baker’s One Bowl Death by Chocolate Cookies
Ingredients
2 packages (16 squares) Baker’s Semi-Sweet Baking Chocolate, divided
3/4 cup firmly packed brown sugar
1/4 cup butter or margarine
2 eggs
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/4 teaspoon baking powder
2 cups chopped nuts (optional)
Instructions
Preheat oven to 350 degrees F.
Coarsely chop 8 squares (1 package) of the chocolate; set aside.
Microwave remaining 8 squares chocolate in large microwaveable bowl on HIGH for 1 to 2 minutes. Stir until chocolate is melted and smooth.
Stir in sugar, butter, eggs and vanilla extract.
Stir in flour and baking powder.
Stir in reserved chopped chocolate and nuts.
Drop by 1/4 cupful onto ungreased cookie sheet. Bake for 12 to 13 minutes or until cookies are puffed and feel set to the touch. Cool on cookie sheet for 1 minute. Transfer to wire rack to cool completely. Makes about 1 1/2 dozen cookies.


And I *loooove* a good peanut butter cookie (with peanuts in them):

Peanut Butter Cookies
Ingredients:

2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup (2 sticks) butter, softened
1 cup packed light brown sugar
1 cup granulated white sugar
1 cup crunchy peanut butter
2 large eggs
2 teaspoons vanilla extract
1 cup finely chopped peanuts

Directions:

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a cookie sheet.

2. Sift together the flour, baking soda, baking powder, and salt in a medium bowl. Set aside.

3. In a large bowl, cream butter, brown sugar, and white sugar until smooth. Stir in peanut butter until fully incorporated.

4. Add the eggs, mixing in one at a time, then add the vanilla. Mix well.

5. Gently stir the dry ingredients into the peanut butter mixture. Stir in peanuts.

6. Roll dough into walnut sized balls. Place on the cookie sheet then use a fork to flatten slightly in the middle (use a crisscross pattern).

7. Bake for 10 to 12 minutes in the preheated oven. Cool on baking sheets for 4 minutes, then transfer to wire racks to cool completely. Makes about 36 cookies.

Ever had a mincemeat cookie? Ok, it may sound weird, but they are really good! I will get the recipe from my dad.
 
Wow I am definately going to try some of these. I don't know if anyone has it but Martha Stewart's Cookie book is actually a great book (also like her cupcake one)

Ever had a mincemeat cookie? Ok, it may sound weird, but they are really good! I will get the recipe from my dad.

Are they kind of like a popover kind of thing? Or a pinched together kind of thing? I have a recipe for mincemeat cornucopias which comes close to a cookie a friend of my mother's used to make for Christmas in the 70s (she made them as mini popovers). LOVED those darn things! I make them every year but I make my own filling for them because a lot of people I know don't seem to appreciate mincemeat. :confused:
