When I log into my DE, it shows my parents on my friends list. Is this 'enough' to be able to do their fp's for them or do I need to log in as them to do their FP's for them? I'm so very confused.

You can book FPs for every person who is listed or linked to your MDE. Select them during the booking process.

On that same topic, can I make them different choices as well? Like we want high adventure and they want laid back...

Yes. As long as their tickets are directly linked to them in your MDE account, you can select rides specifically for them.
