No FP are scheduled before you scan your ticket at the park for the day.

MaxPass is pretty much an electronic version of legacy FP.
 

How does FP work in Disneyland, can you set them up like you do in Disney World before hand?

No, Disneyland FP is like the old WDW style. You grab them from each attraction's kiosk. Or you can use MaxPass to do it digitally.
 
There are 2 ways to get Fastpass: Paper Fastpass and Maxpass. Here is how each one works:
Paper Fastpass:
You will need your park ticket. After you have entered the park, you go to a Fastpass kiosk for the ride you wish to get a Fastpass for. Fastpass kiosks are generally right by the ride (Radiator Springs Racers Fastpass kiosks are by Its Tough To Be a Bug and Star Tours is really close but is actually by Buzz Lightyear). You stick your ticket into the machine face up and it will give you a 1 hour time window to return. At the return time, you come to the Fastpass line for the ride and scan your ticket. You can get a new Fastpass for any other ride 2 hours after you get a Fastpass or at the Fastpass return time, whichever is soonest. and can get a new Fastpass for the same ride at that rides return time. (For example, if you got a Space Mountain Fastpass at 11:00 and the return time was 12:30-1:30, you could get a new Fastpass for Space Mountain or any other ride at 12:30. If you got a Space Mountain Fastpass at 11:00 and the return time was 1:30-2:30, you could get a new Fastpass for anything except Space Mountain at 1:00 since that is 2 hours later, and you could get a Space Mountain Fastpass at 1:30) If the return time is less than 30 minutes away, you have to wait 30 minutes to get a new one.

Maxpass:
Maxpass costs $10 per person per day and is similar to paper Fastpass but has some advantages. After purchasing and entering the park, you can start reserving Fastpass on your phone through the Disneyland app. The amount of time to get a new Fastpass is a little different. If the return time is less than 30 minutes away, you have to wait 30 minutes to get a new one UNLESS you use the Fastpass before those 30 minutes are up. If the return time is 30-90 minutes away, you wait until the return time to get a new Fastpass and if the return time is more than 90 minutes away, you wait 90 minutes to get a new Fastpass. Like paper Fastpass, you have to wait until the return time no matter what to get a Fastpass for the same ride. (For example, if you get a Space Mountain Fastpass at 11:00 and the return time is 11:05-12:05, you would have to wait until 11:30 to get a new Fastpass unless you use the Fastpass before then. So, if you used the Fastpass at 11:05, you could immediately get a new one for any ride. If at 11:00, the return time was 12:00-1:00, you could get a new Fastpass for any ride at 12:00. If at 11:00, the return time was 1:30, you could get a new Fastpass for anything except Space Mountain at 12:30 and you could get a new Fastpass for Space Mountain at 1:30.) To get Fastpass through Maxpass, you have to have entered the park that day. If you enter the park and then take a nap at the hotel, you can reserve Fastpass from your hotel. If you sleep in, you can’t reserve Fastpass from your hotel.

Fastpasses run out more quickly for some rides than others. At Disneyland they generally run out in roughly this order: Space Mountain, Indiana Jones, Matterhorn, Splash Mountain on a hot day, Star Tours, Thunder Mountain Railroad, Haunted Mansion, Buzz Lightyear, Splash Mountain on a cold day, Roger Rabbit’s Car Toon Spin. At California Adventure, they run out in roughly this order: Radiator Springs Racers, Guardians of the Galaxy, Toy Story Mania, Soarin’, California Screamin’ (being changed to Incredicoaster- this could affect FP availability once it opens), Grizzly River Run, Goofy’s Sky School.
 
For paper fastpass it's also opening up when you redeem the fastpass (last week I rode soarin 4 times within an hour all using fastpasses).
I guess maybe put it this way: when a fastpass is redeemed, it is gone. The restriction associated with it is also gone.

Will u be notified once when you are able to get a new Maxpass? Meaning will the digital pass state somewhere on it when a new Max pass can be reserved or do you have to keep track yourself? TIA!! Leaving Sunday :)

There's no notification, but the pass itself says when you can get another. If you want a notification, you have to set up a reminder yourself.

So unlike WDW you can not book these ahead of your visit? Kind of confusing as it is our first trip and planned on getting max pass. I just assumed you could book them now for next month. So if we buy a discounted a ticket we can just add max pass that day at the park with no real reason to do it ahead of time? Thanks

Correct. You can’t book a FP using MP until you have scanned into the park. Adding it once you’ve entered the park is very easy. It just takes a few clicks.
