Fast Pass Questions

We are headed to Ft. Wilderness in about a week. I've waited too long to pick out our fast pass attractions and now all of them are booked up. Also, we are traveling with another family and it will be difficult to coordinate fast pass over the internet (seems easier in the park). What would you folks recommend? Should i just pick the fast pass selections that are available and change them when we get there? Or wait til we get there to pick our fast pass selections at a kiosk (then we can all make our selections at the same time)? I'm not sure how availability of fast pass works, so not sure which would be to our advantage.

Also, I should mention the only options available are early afternoon. Would I be able to get additional fast passes in the park if I haven't used all 3 yet?
