Fantasmic Dinners... What's to Eat??

I read on allears.net that Mama's and Brown Derby have now moved to a la carte servings for Fantasmic dinner packages. What does this mean? Last time, we ate at Mama's and we had to choose a certain amount of food. Does this new way of doing the package still include this, or could you go in and each order an entree and a drink and get credit for the meal?
