Personally I wouldn't plan to just jump in an start "extreme couponing" if you aren't a couponer to begin with. It takes time to gather your coupons, unless you purchase them online. I coupon and the savings vary week by week. Our stores do not double coupons, so there are no extra savings there, and my average savings each week with coupons is about $15.
When I go grocery shopping I plan my trip around my coupons, using coupons for the items that I usually buy. I then couple them with any in store sales or in store coupons. I would take a look at the items that you currently purchase and start looking for coupons for those items. This should give you an idea of what savings using coupon scan give you.
