We always choose the cheapest option for our family of 5 since we spend so little time in the room, so I completely understand why you want POR. I've priced out other onsite options and could never make the numbers work renting points either. We did stay at BC once because I won a trip and that is where they put us. Don't get me wrong, it was wonderful and the pool and location were great, but we go to Disney for 2 weeks usually and I just can't justify the price difference bumping up to a deluxe for us. We also stayed in POP one year when my youngest was still under 3. While the room was fine, we missed the beautiful grounds of POR and the shade at the pool. The food court at POP was also so loud and echo-y that we hated eating there. I don't know if the other values food courts are the same. Now that my kids are older, we would need either a value suite or two vale rooms. Both of these options cost more than POR. So, we personally would rather trade room "space" in order to gain the nicer resort grounds, pool, and quieter food court. As an added bonus, it is also cheaper. Honestly, we don't mind being a little crowded in a hotel room, especially since we really only sleep there.
So, that said, we have not stayed in the newly refurbed rooms yet and I am a little concerned about the lack of storage in the new AB rooms. We used to be able to fit all of our clothes in the dresser, but with only three small drawers under the Murphy bed, I don't think we will be able to fit it all. I'm planning on bringing at least two sweater hanger organizers for clothes to hang in the sink area. I'm also bringing an over the door shoe holder for the bathroom door for small things. I'm also bringing some of those cloth cubes that fold flat so we can keep some clothes on the shelf in the sink area above the closet rod and not have them fall all over the place.
When my youngest was still in a pack n play, we found it worked better for our family to keep her in between the beds in the main area of the room, although I don't know if it still fits since they switched to queen beds. We were all so tired when we got back to the hotel that the kids would fall right to sleep. I could then get ready for the next day behind the curtain by the sinks without disturbing them (washing bottles, sippy cups, repacking the diapers/wipes for the next day, etc). Being the mom, I was always the last to bed and the first to rise and I loved being able to wake up, get myself ready, and get our stuff ready for the day without disturbing the kids. My husband would also get showered and dressed before we got the kids up. If the pack n play was by the sinks, it would have been much harder to get ready for me. I also think you will lose valuable storage area if you put the pack n play in there.
Good luck! It will be tight, but it is do-able and POR is such a beautiful resort so I think it is worth the effort!
