There are, but guests aren't allowed down there unless they pay for a tour. Even there, they specially make some of the backstage areas are more guest friendly (like the Main Street bypasses at Disneyland and Magic Kingdom). They know guests are going to use the areas but they never store anything too super secret.
Also, no one ever talks about the utildoors under Epcot, but they are totally there.
