Enough to do at Ron Jon Cape Caribe for a week?

I'm really interested in staying at this resort but am afraid we might get bored. Our usual vacation (husband and 9 and 10 year old boys) consists of theme parks hopping with very little down time. I'd like some down time but not much. Any help would be appreciated.
 
we stayed a week and loved it and all but besides nasa about 40 min away there is NOTHING close by at all, you are at the end of a long driveway unfortunalty we found ourselves driving into orlando to do the dixie stampede and the downtown disney stuff, things we never had time for,and it is quite a drive, with traffic,any quest. just ask
tips we rented from redweek member;
1,make sure you get tickets for the safari todd show as soon as you get your room key and arrive early he is fascinating lets your kids hold snakes and alligators great photo op.
2 ask for beachfront top floor it's nice cruiseships sail by,and just a walk to the pool or trolly car
3 no good rest. anywhere around try the onsite pizza not to pricey and not too bad
4 go to the first day meeting you learn alot, movie schedules, free activities and how the place is set up.
5 grocery store no too far, cheaper then the store onsite..toilet paper eggs and soap and stuff
