Enchante on Treasure - If we order a la carte?

Tonight our window opened for booking experiences on our October sailing on the Treasure. We will be celebrating my wife's 50th birthday on this cruise and I managed to book Enchante for dinner on her actual birthday. She's very happy! We enjoyed an amazing dinner at Remy on the Fantasy last summer and we hope this will be just as great if not better.

We showed an image of the menu to our 19 year old daughter, who loved her Remy experience (but is still expanding her culinary adventurousness), and well she was unsure about the Passion and Potager options. I pointed out the Carte options, but then she asked if she ordered from that, is that all she'd get? Basically, would she be excluded from any courses, such as the amuse bouche(s), bread service, cheese, pre-dessert treats, or dessert that come with the three main options? If so, can they be added to a Carte selection? If so, what are the prices?

Of course she noticed the Collection option on a menu image we found online, but I am not exactly sure how that one works. What if the guest is a carnivore, but isn't a huge seafood fan? Is there any guest input on any of the three "courses" options?

We’ve eaten at Enchanté quite a few times and have always found them to be very accommodating. When they go through the menus with you, if there is one that is appealing except for some of the options, they are happy to substitute other dishes, some of which are on the à la carte menu and others just things the chef can make to accommodate guest preferences. You are then able to get all the other courses, extras, etc. without issue.
It doesn’t sound like the Collection would be a good option - it’s a 10-course menu which includes at least several “new” dishes that they are trying out. Less amenable to substitution, and probably best for more adventurous diners.

I have been watching folks cruise videos online lately and happened upon one today with a couple, where one ordered a la carte and the other one of the prix fixe options. They happened to show a small menu that showed that the cheese and dessert courses could be added to an a la carte order for $19 each. Nice to know that is an option too.
