Educate my on FP+ and traveling with young kids.

We are debating trip in late October or early November. It would be myself, DH, 5 y/Io daughter and 3 y/o son. We last went to disney in Feb 2013, but little did I know all the changes that were coming. Our family did utilize fast passes, but other than that were pretty lax in planning. We just did whatever caught our eye at the time. I have new reading here on numerous posts and want to make sure I have things correct.
1. If you are offsite do you not have access to any fast passes? We prefer space vs being on property and typically rent a near by condo.

2. How essential is planning everything now? He far in advance are you planning rides, fireworks, etc? I know how far you can plan, but is there room for change? Can you change/ choose when you are there without having nothing left to choose from?

Everything we tell you now can (and very likely WILL) change by October (and likely even sooner.)

But, for NOW...

1. You can make 3 FP+ reservations per person, per day only AT THE PARK, in-person on the day
you are there.

2. Guests staying ON-site can book FP+ 60 days (or a bit more) in advance of their check-in date.
As of NOW, it seems that guests can
make changes to their FP+ during the actual day they are in the park (at least in the mornings.)
That may or may not hold true as more and more guests are rolled into the FP+ system.
