Easy office breakfast dish

This year on Secret Santa "week" our office has decided to have every dept cater breakfast on their day. Luckily our dept has a Monday so I have the weekend to prepare.

I am making muffins but I'd like an easy casserole type dish that can be easily reheated via microwave.

Any suggestions and recipes? Remember, I am NOT a cook!:laughing:
 
Both of these are good depending on whether you want something sweet or savory:
Hash Brown Casserole

1 (2 pound) package frozen hash brown potatoes, thawed
1/2 cup melted butter
1 (10.75 ounce) can condensed cream of mushroom or chicken soup
1 (8 ounce) container sour cream
1/2 cup chopped onions
2 cups shredded Cheddar cheese
1 teaspoon salt
1/4 teaspoon ground black pepper
Preheat oven to 350 degrees. In a large bowl, combine hash browns, melted butter, and cream of chicken or mushroom soup, sour cream, chopped onion, Cheddar cheese, salt and pepper. Place mixture in a 3 quart casserole dish. (I sauté the onion before adding) Bake covered in preheated oven for 40 minutes.

Stuffed French Toast

8 slices of bread cubed
2 8 oz pkg cream cheese (I usually don’t use all)
12 eggs
2 cups milk
1/3 cup maple syrup

Place half of cubed bread in bottom of a 9 x 13 pan. Cube cream cheese and put on top of bread. Add remaining bread. Combine eggs, milk and syrup mixing well. Pour over bread. Cover and refrigerate overnight. Bake at 375 degrees for 45 minutes. You could add a dash of cinnamon to egg mixture if desired. Serve with maple syrup.
 
Here's an easier hashbrown casserole. You don't even have to measure things if you buy the right size containers of the sour cream and cheese. I get the Kroger brand frozen hashbrowns. The number of ounces in the bag is less than the recipe calls for, but don't worry. It works fine with slightly less potatoes. I don't measure the parmesan cheese. I just sprinkle as much as I want on the top. I probably use less than the recipe calls for on that. I also make it without the ham.

Yummy!! I thought of a hash brown sort of thing but had no idea what tasted good or not. I'll try them out beforehand because my group is rough on you if you mess up!! :lmao:
 

Breakfast tacos...

A South Texas staple. We always LOVE the employee who brings breakfast tacos!
 
This is one of my most requested breakfast potluck items at work.

Breakfast Quiche

6-8 slices of bread
1 package mini Smoky Links cut into small pieces (you can also use any kind of breakfast meat--bacon, sausage, ham or make it as vegetarian with no meat. I like Smoky Links because I'm lazy and you don't have to cook them before assembling the casserole)
8 oz shredded Cheddar cheese
1 doz eggs
1 tbsp salt
1/2 tsp dry mustard
1 cup milk
1 small can diced green chile

Beat together eggs, salt, dry mustard, milk and green chile. Grease 9x13" pan. Remove crusts from bread. Butter both sides of the bread and place in pan to cover the bottom. Add layer of cheese, then meat, then pour on egg mixture. Cover and let stand in the fridge overnight.

Bake at 325 degrees for an hour. This reheats beautifully. You could omit the green chile but I find that it's really bland without it and I've converted even the spice shy folks that I work with who had never tried chile before. :thumbsup2

This recipe can become a main dish for those who don't can't eat eggs very easily by adding cooked, crumbled breakfast sausage. We have a no-egg person in our group and this was greatly appreciated. You can also double it and do it in the crock pot overnight and take it to work hot and ready!
