Looking for a quick & easy Chicken recipe (aside from just breaded & baked) for dinner tonight. I have 5 chicken breasts thawing in water right now & have a zillion errands to run, as well as a Speech & Occupational Therapy appt for my 17 month old. By the time we get home, I will have 30 minutes before my 7 y/o gets off the school bus so I'd like to have it at least prepared & ready to shoot in the oven before I have to meet him at the bus stop. Naturally this evening I have a church meeting so my whole day is rushed today! :rolleyes: Any suggestions?
 
okay, sautee the breasts in butter then set aside (actually place them on a bed of cooked minute rice). Saute mushrooms and onions in the same butter, then add 1 cup chicken broth and 1 can of cream of mushroom soup, heat thoroughly. Remove from heat, add 1 cup sour cream. Pour over chicken, sprinkle with paprika and bake for 30-40 minutes, until juices run clear.

Quick and easy and most everyone (except my mushroom hating husband) loves it. A green salad, some french bread, and white wine. Voila.
 
Take the chicken breasts and brush with a little bit of olive oil (1-2 Tbs should do all 5). Place in a pan and sprinkle with your favorite seasoning. I like Mrs. Dash garlic herb or lemon pepper.

We usually have with brown rice or potatoes of some sort. But the Minute Rice beansmom suggested would work too.

P.S. They take about 20 minutes in the oven at 425 if fully thawed. :rolleyes: I was rushing things Monday night and they took a little longer, actually finished them in the microwabe because everyone was hungry.
 
I know this is too late for tonight, (I've been off-line all day) but maybe for another time?

I like to saute boneless chicken breasts in a little butter (now I use olive oil, though) and about 1/4 to 1/2 cup of the Lea & Perrins Worcestershire for Chicken. Serve with rice pilaf.

Or for a southwestern flavor -
Crush cheez-its in a zip lock baggie. Add a package of taco seasoning. Coat chicken breast with cheez-its & microwave (covered) for 10 - 15 minutes. Serve with Spanish rice from a package.

Last week we had some catfish that I just sprinkled with cajun seasoning. I wasn't sure DD would like the fish, so I did a chicken breast the same way. . . just sprayed with olive oil & sprinkled ~1 Tbl cajun spice on the breast. I baked it because I put the fish in the oven, but I could have pan fried with a bit more oil. Yummy!

edited to add We do actually eat veggies with these meals - I just didn't mention it. We usually have either a salad or a "veg of the day."
 

This one is also to late for tonight but it is one of my fav's it is so easy and good
boil chicken till done
pull chicken apart and place in 9x13 pan
cook one bag of frozen brocolli or use fresh (fresh is better)
put that over the chicken
mix 2 cans cream of brocolli soup with 1/2 to 3/4 can of milk pour that over brocolli
top with cheese and sprinkle with bread crubms, bake till bubbly and heated .
there really are no measurements on the chicken, broc. or cheese. You cna use as mych or as little as you want, the only thing is don't get the soup to "soupy" it should be thicker like gravy, I have even used 3 cans and than made mashed potatoes with it or rice.
 
Hi all! Thanks so much for your input. I ended up getting home so late (my DS's therapy over ran) that I didn't have time to jump back on the computer). So I just made my chicken rolled in bread crumbs mixed with parmesan cheese & some minced parsley. It was fast & easy but I make that quite often & was looking for something new.

I loved all of your ideas, especially the broccoli one. I can't wait to try that one next!! Although I think that one would have taken me more time.

Anyway, thanks so much again for your help!

my george does a good number on those.......I just put them either in chicken marinade or italian dressing and it takes about five minutes in that George Foreman grill and it is still very juicy and good.....
 
Here's another good LOW FAT recipe- BUT IT'S DELICIOUS

salt and peppper Chicken breast. Dredge in flour. Brown in skillet with a a small amount of Olive oil, just enough to cover the bottm of the pan. Set into a 9x13 dish. Cut up about 4-6 stalks celery, about 3-4 carrots and an onion. Sautee these in the left over olive oil until transparent. Add 1 can of chicken broth to veggies. Stir and pour over chicken breasts in the 9x13. Cover with aluminum foil. Cook for 1 1/2 hours at 350. The last 10 minutes take foil off and add canned mushrooms if desired. Serve over rice. YUMMY!
 
Another easy recipe (and tasty too!)

Place chicken breasts in the bottom of a crockpot. Top with 1/2 cup Italian dressing, 1/2 Tbsp Italian seasoning, 1/8 c. grated parmesan cheese. Then put a layer of potatoes cut into large cubes (can be peeled or not). Again add 1/2 c. Italian dressing, 1/2 Tbsp Italian seasoning, 1/8 c. grated parm. cheese. Cook on low all day (8 hours) or high for 2 hours. Chicken becomes super tender and tasty - even my kids like this!

JCarangal ~ What is Italian Seasoning? Is it a prepared seasoning in a jar or some parsley, oregano (yuck ~ I can pass on that), garlic, etc that you toss in?

Recipe sounds delicious!
 
The Italian seasoning I use is called that and I bought it in the spice aisle of the grocery store. According to the bottle, it is a combination of basil, thyme, marjoram, rosemary, minced garlic, crushed red pepper, and oregano. If any of these don't work for you, I would just toss in some of the the other spices that you do like. (a dash of this and a dash of that).

That recipe is yummy and easy - and great when you don't know what else to make - LOL!

I never buy Italian Seasoning anymore. I now get my spices at a local specialty shop & they're much fresher than those in the grocery. I just mix my own using a recipe I found on the Internet.

Italian Seasoning

2 Tbl garlic powder
1 Tbl parsley
1 Tbl basil
1 Tbl oregano
½ tsp pepper
½ tsp thyme
2 tsp onion powder

Mix ingredients together and store in air tight container. Yield: ~ ½ cup.
 
This is a really simple recipe

Pasta with chicken, roasted peppers and feta

2 cloves garlic minced
1/4c olive oil divided
1-1/2 c chopped cooked chicken (I use already prepared grilled chicken strips)
1 jar (12oz) roasted red peppers, drained, chopped
8oz farfalle (bow tie pasta)
2pkg (I use 1 and1/2)Crumbled feta cheese with basil and tomato
1Tbs chopped fresh parsley (optional)

COOK and stir garlic in 2 Tbs of the olive oil on medium heat 3 minutes. Add chicken, red peppers and remaining 2Tbs olive oil. Cook 2 minutes or until thoroughly heated.
COOK pasta as directed and drain.
TOSS chicken mixture with hot pasta and feta cheese. Sprinkle with parsley. Makes 4 servings
Serve with tossed salad and crusty italian bread.

This is a favorite in our home. It is quick and easy as well.
