I tend to use word of mouth here, https://www.cruisecritic.com/memberreviews/shoreexcursions/ or just searching as I would a land trip (and picking short tours/recommendations during shore hours).

The way I did it was look at the excursions Disney has on their website and then you can usually google the port and find other excursions. Something else I found is that some of the companies that offer certain excursions with Disney may offer even more on their normal website!
