I'm looking for something light to start my dinner off with. A nice fruit would go well. We will be having stuffed shells for dinner followed by spiral ham and assorted veggies. I would like something pretty easy because there are 23 of us. What do you make.

I often thaw shrimp and serve with cocktail sauce for a starter. Relish dishes (carrots, celery, cherry tomatoes, etc.) also go well.

....I really need to start thinking of our dinner!
 
Do you mean as an appetizer or as the first course of the meal???

If an appetizer, I like to do shrimp. Easy, people like it, around here we can get it on sale for a relatively inexpensive price and people are always impressed by shrimp.

If it's a first course for the meal, do a nice fruit salad with a plop of sherbert on top.
 

For an appetizer, I would go with a Shrimp tray ...

For a first course, how about Cantaloupe with Prosciutto or a Waldorf Salad with apples & raisins (or even cranberries) ...
 
We do a big salad (easy to prepare in bulk) with romaine, cut up apple, craisins or dried cranberries, and walnuts with a dijon vinagrette, or a spinach and blueberry salad with another type of vinagrette.

Pomegranate seeds also go nice on a spring green salad with a light vinagrette and some goat cheese, red onion and wedged orange slices.
 
This is so simple but a family favorite. Whip cream cheese. Add a little cherry juice and whip together. Place a dollop on a pear half and top with a cherry. Its so easy to make. You can make it ahead of time and store in fridge.
