I don't usually think of brunch for Easter because we go to a big family meal later in the day. However, we do a HUGE brunch thing here for Christmas & I think many of the same recipes would do for Easter. I always like to use some Disney recipes - let me know if you can't find them with the search & I'll PM them to you:
Strawberry Banana Bread - WL
Banana Bread Pudding - AKL
Au Gratin Potatoes - MK, Cinderella's Table

I also like to make Crab Rangoon & a make-ahead breakfast casserole I got here.
I like to make this coffee cake as muffins. Very tasty & individual servings that way.
Clydes Coffee Cake
2 c flour
1½ c sugar
¼ tsp salt
¼ lb butter, melted
2 tsp baking powder
1 egg
½ c warm water
1 tsp vanilla
Combine flour, sugar, salt & butter. Reserve 1 cup for crumbs. Add baking powder, egg, water & vanilla. Mix only until moist. Pour in greased 8x8 pan. Bake at 350 for 30 minutes. Double to make 3 dozen cupcakes.
