Actually AKV is a pretty big project. In the first phase they will be converting some existing cash rooms to DVC. They are also beginning construction on a stand-alone DVC building. When complete, the Animal Kingdom Lodge will be home to more DVC units than the BoardWalk and more than twice as many as the Beach Club.

Situations like this at Disney tend to be pretty fluid, so it could change at any moment. However between the announced size of AKV and the remaining points at Saratoga Springs, DVC would seem to have plenty to sell for at least 4 years. If they start building on Disneyland property (another popular rumor) or even off-site, it will stretch that timeline out even further.
Stayed at the Contemporary last month and talk to a lot of cast members. The info they all seemed to be saying was the North wing was going to be leveled and the ground needed to sit for a year or two to settle and then a ten floor DVC would be put up with a walk way on the 4th floor to the monorail. This was not from just one cast member, but at least 5-8 different ones. We could see the workers gutting out the North Wing, so I think this is true. I would think this might open up around 09 - 10.
