Do any of them have little "prizes" such as the Pressed Penny that was in some of the P&F France missions?

We didn't do all of them, but none that we did had prizes. Some of the effects that you cause were kind of cool and 2 of my 3 kids enjoyed them.

I did all the missions recently and they are some physical props as part of a few missions, but nothing that I would consider a "prize". I truly loved the experience. I wish they would randomize it a bit more, so that it has greater repeatability.

Does it matter which country you start in or is each country it's own mission?

But the below Countries do not participate.

Canada
Italy
The American Adventure
Morocco

You may start in any country and normally (have not tried the Duck Tales version), an entire mission is completed within a single country. You can do one or more missions, in any order.

It's a game in different countries, accessed via the Play Disney Parks app on your phone which causes different things to happen as you visit various places in a country. We've done it a few times and quite enjoyed it!

An example of an 'action' is in Germany when we stood near the beer steins, after following instructions on our phone the beer steins started to open and play a song. (Not sure if this still happens as we haven't visited this country with the game in a number of years.)

It's a fun way to spend time in a country and see parts you may not otherwise see.

If you search YouTube you will also find examples of people playing the game.

My kids love doing all the festival quests and are disappointed there isn’t a festival during our summer trip…perhaps this will be a good alternative.

It’s fun, but it’s definitely a downgrade from the Phineas and Ferb one they had. That one was a lot more interactive.
