Does the Eastern 7 Day have any good Family Excursions (besides beaches)?

We just got back from the 7 Day Western cruise and there were some wonderful excursions for families (we did the swimming with stingrays and the submarine)....and there were others we wished we could do but didn't have time (had to pick just one excursion per stop).

But on the Eastern Cruise it seems kind of boring unless you love hanging out on beaches. My family enjoys Castaway Cay, but that is enough of the 'beach' scene for us. What else is there to go on the Eastern? (and we don't really enjoy shopping either--we like seeing 'sights')

DS 10.5, DH & I will be on the Nov 30th Eastern cruise.
In St Marten we are planning on the See & Sea - 1 of the stops is at an Atlantis Submarine.
St Thomas we found there was alot of choices for us. Atlantis Submarine which submerges (St Marten doesnt), Coral World/Coki Beach and Paradise Point tramway. We are planning on Coral World and if there is time Paradise Point tramway.
DH & DS are not beach people so we are only doing a beach day at Castaway Cay. They are planning on snorkeling while I float with my Konk Kooler.
