Do you think I will be able to book HHI and VB 7 months out for early May 2008?

We are celebrating our 25th anniversary next year and decided we wanted to try both resorts. We are planning to go to WDW Oct. 2008 and wanted to do something different for our 25th.

Do you guys have any suggestions for things to do at both HHI and VB (sightseeing, dining, etc.)?
 
Thanks. I've been doing some research online to see what's in the area and it looks like Charleston is about 2 1/2 hrs. from HHI and Savannah is about 1 hr. from HHI. I also found a few wineries in the area. I've checked out some menus but would like to hear recommendations before we try any of the restaurants.
 
I have been going to Hilton Head for years and the best restaurant we've eaten in has to be Stripes. It is a nice upscale place with excellent food and a good wine list, perfect for a special occasion. We held my father in laws 80th birthday there and my step mom's 60th. We eat there on every trip since we discovered it! Definitely go to Savannah. It's really only about 45 minutes away at the most. While I love Charleston, I just think it's too far unless you're planning to do an overnight.
Renting a bike is always great. We always do a dolphin cruise with Scott and a kayaking trip on the Marsh. There are also some great activities wit hthe naturalist. Our favorites are the Marsh Walk and Pinckney Island.

We have done both in early May booking at the 7 month mark.
 
Don't think you'll have a problem with HH and hope VB is not a problem as we want to do May of 2008 also. Plan on doing a three day cruise Thurs - Sun, and Sun to FRi at VB. Saves on W/E points. IMO when in HH Savanna is a must see, makes a great day trip, and you won't be getting back to your room real late. Also JMO Charlies Crab has some of the best food on the island, it is a chain but kind of like the Ruth's Crist of sea food. Could go on all day about resturants there'e plenty of really good ones Signes bakery is a great stop for breakfast and some goodies to bring back to the room. Have Fun, We're looking at 1st or 2nd week of May for VB, it'll be our first time there.
 
we were able to reserve an OVIR in mid May at a lot less then the 7 month mark. I would guess that May before Memorial Day would not be a problem at 7 months.
 
I get to book at 11 months. I had to cancel our summer trip during peak Aug. due to expecting another baby. (you find out these things after your trip plans) I did not cancel right away, I wanted to wait until we could work out an alternate date. I called around the end of March and asked what would be open and MS told me I could take my pick of any week except Memorial Day week.

we went to HHI in 2006 first week in May and had no trouble at all booking at 7 months (we also had no trouble booking late September in 2004)
