Do you have to get the dining plan for all the days you are there, or can you just get it for part of the trip? For instance, if you are going to be there for 10 nights, can you just get the dining plan for 6 nights?

As understand it yes, you have to get it for all of the nights (remember it's done by nights not days)

However that said there's nothing to stop you from doing a split stay - 6 nights in one place on the dining plan (although your dining credits would expire on the last day) and 4 nights somewhere else (perhaps on a 'room only' discount).

As the pp said, the DDP goes by the number of nights you stay and you must get the DDP for the whole time unless you do a split stay. If you did the DDP at the beginning of a split stay, your credits would be good through midnight of the day you change resorts. Keep in mind that unless you stay on points (DVC) or have an AP and book an AP + Dine package, you have to purchase at least a 1 day base ticket for everyone on the ressie in order to get the dining plan (unless you book free dining, which requires at least a 2 day base ticket per person). HTH :).
