Do you ever go just one or two of the parks on a long stay?

We've done 3-4 night trips with no park visit. I'm going next month for 3 nights and if I visit a park, it will be Animal Kingdom. That and Epcot are the 2 full day parks for me as I don't do a bunch of rides. Between drawing characters and the safari(usually more than once), I get a half day just in Africa alone. I may not do Disney Springs this time and hit Citywalk instead-just seems like there's more for me at Citywalk anymore.
