Do the hotels have the option to pay for a late checkout rooms?

you don't really need a late checkout at DLP. Most people just pack up, checkout, leave their luggage for free at their hotels for the day, and then hit the parks until its time to leave . You can use all the public amenites at your (or any other) hotel on your last day ie public toilets, reception areas, bar, restaurants.
