Do I need to remove the third person on ressie if they're not going?

No need to remove her unless you are doing a Disney Dining Plan.

No not really, as @erionm said only if you booked the Dining Plan in which case they will charge you for her dining plan.

We recently did a similar yet opposite thing - we added our daughter who's in the DCP to our reservation even though she is not staying with us. She is at Flamingo Crossing, but this way she can attend the Extra Magic Hours with us while we are down there.
